Parmesan Vegetable Marinade

 

I am always looking for a new way to prepare vegetables and this recipe is a good one. This vegetable marinade is so delectable.  You simply cannot believe how good the vegetable taste when they are done marinating.  Serve this in the middle of winter and you suddenly be transformed to the middle of a warm summer day.

 

1 ½ cups vegetable oil

2/3 cup white wine vinegar

¼ cup grated Parmesan cheese

1 tablespoon sugar

2 teaspoons paprika

1 teaspoon garlic salt

1 teaspoon celery salt

1 teaspoon dry mustard.

¾ teaspoon pepper

2 cups cauliflowerets

1 medium zucchini, sliced 1/8 inch think (about 2 ½ cups)

1 small red onion, sliced into separate rings

½ cup sliced celery

12 cherry tomatoes, halved

Lettuce leaves

 

In a screw-top jar, mix oil, vinegar, Parmesan cheese, sugar, paprika, garlic salt, celery salt, dry mustard and pepper then shake well.  In a large bowl, mix cauliflowerets, zucchini, onion, celery, and cherry tomatoes.  Pour dressing over vegetables and toss gently.  Cover and refrigerate 8 hours stirring occasionally.  To serve, drain vegetables, reserve dressing.  Arrange lettuce leaves on a platter.  Mound vegetables on lettuce-lines platter and drizzle with reserved dressing.

Zucchini Bread Recipe

Zucchini Bread

 

A cup of tea and a slice of buttered Zucchini is one of my favorite things. This is a wonderful zucchini bread recipe.  I like it best with the nuts included. So make this fantastic bread, then take a few minutes for yourself to sit and enjoy it’s goodness.

 

3 cups shredded zucchini which is about 3 medium zucchini’s

1 2/3 cups sugar

2.3 cup vegetable oil

2 teaspoons vanilla

4 eggs

3 cups all purpose flour

2 teaspoons baking soda

1 teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground gloves

½ teaspoon baking powder

½ cup coarsely chopped nuts

½ cup raisins if desired

 

Begin by preheating oven to 350 degrees.

Grease the bottoms only of 2 loaf pans.

Combine zucchini, sugar, oil, vanilla, and eggs and mix well.

Add the rest of the ingredients

Pour into pans and bake 50 to 60 minutes or until wooden pick inserted in center comes out clean.

Cool 15 minutes and loosen sides of loaves and remove from pan. Cool completely before slicing zucchini bread

Southwest Dip

Southwest Dip

 

Make your movie night at home special with this dip recipe.  The ingredients are perfectly proportioned and combine to make a fantastic tasting dip.  This southwest dip is very simple to make and truly is delicious.

 

½ ground beef

½ teaspoon dry mustard

¼ to ½ teaspoon chili powered

¼ cup finely chopped onion.

¼ cup finely chopped green pepper

1 16 ounce can of refried beans

1 8 ounce can tomato sauce

1 ¼ ounce taco seasoning mix

Sour Cream topping

Finely Shredded lettuce

Shredded cheddar cheese

 

Cook ground beef in a skillet, making sure to stir occasionally, until brown.

Drain ground beef.

Stir in mustard, chili powder, onion, bell pepper, beans, tomato sauce and dry seasoning mix.

Heat to boiling, stirring constantly.  Spread in ungreased pie plate

 

Sour Cream topping

1 cup sour cream

2 tablespoons shredded cheddar cheese

¼ teaspoon chili powder

Mix all the ingredients.

 

Spread sour Cream Topping over ground beef mixture. Sprinkle with lettuce and cheese.  Serve with tortilla chips or fresh vegetables slices.

Pasta Primavera Recipe

Pasta Primavera

 

Pasta primavera was a menu favorite several years ago.  You do not see it see it as often today.  So if you are like me and like a good pasta recipe, especially pasta primavera, then you are going to love this recipe.  The recipe is chock full of great vegetables and wonderful seasonings.

 

8 ounce uncooked spaghetti

1 cup tender green beans cut in 1 inch pieces.

2 small zucchini, sliced

2 small yellow squash, sliced

1 cup thinly sliced carrot

1 cup cauliflower flowerets

1 tablespoon olive oil

2 garlic cloves minced

1/8 teaspoon crushed red pepper flakes

¼ cup chicken broth

¼  cup lightly packed fresh basil leaves, chopped

¼ cup oil-packed, sun dried tomatoes

3 tablespoons grated Parmesan cheese

¼ cup chopped fresh parsley

 

Cook spaghetti according to package directions, drain and set aside. Steam vegetables only until crisp-tender, drain and chill.  Sauté garlic in olive oil until light brown.  Add crushed red pepper, stir and then add chicken broth and simmer 1 minute.  Add chopped basil, spaghetti and vegetables and toss.  Arrange on platter.  Garnish with sun-dried tomatoes, parmesan cheese and parsley.  Serve at room temperature.

Swiss Steak

If you like swiss steak then you will like this recipe. This steak recipe is well seasoned and aroma when is cooking will make your mouth water. Dinner will become a special when you serve this swiss steak recipe.

 

3 tablespoons all-purpose flour

1 teaspoon dry mustard

½ teaspoon salt

1 ½ pound beef boneless round, about ¾ inch thick

2 tablespoons vegetable oil

1 can (16 ounce) whole tomatoes, undrained

2 cloves garlic, finely chopped

1 cup water

1 large onion sliced

1 large green bell pepper sliced.

 

Mix flour, mustard and salt.  Sprinkle one side of beef steak with half of the flour mixture and pound in.  Turn beef and pound in remaining flour mixture.  Cut into 6 serving pieces.   Heat oil in skillet until hot.  Cook beef over medium heat about 15 minutes, turning once, until brown.  Add tomatoes and garlic and break up tomatoes. Heat to boiling then reduce heat.  Cover and simmer about 75 minutes or until beef is tender. Add water, onion and bell pepper.  Heat to boiling and reduce heat and cover, simmer 5 to 8 minutes or until vegetables are tender.

Sausage Casserole

Sausage Casserole

 

I am so reminded of my childhood with this casserole recipe. Polish sausage and sauerkraut was a favorite in my home and part of my mother’s heritage.  You will love the ease of this recipe and the taste is simply marvelous.

 

2 cups applesauce

1 (16 ounce) can sauerkraut, drained

1/3 cup water

2 tablespoons brown sugar packed

½ teaspoon salt

4 small onions quartered

4 small potatoes, peeled and quartered

1 (12 ounce) Polish sausage, cut diagonally to desired lengths

Snipped parsley

 

In a 3-quart saucepan, combine applesauce, sauerkraut, water, brown sugar, and salt.  Add onions and potatoes.  Cover and simmer 20 minutes, stirring occasionally.  Add sausage and simmer covered about 20 minutes longer, stirring occasionally.  To serve spoon sauerkraut mixture onto platter and top with sausage.  Sprinkle with parsley

Roasted Potatoes with Rosemary

 

You are sure to love this potato recipe.  It is both easy to bake and taste delicious.  Because it is such a simple recipe it will become a everyday dinner favorite.

 

3 large baking potatoes, unpeeled

Olive Oil cooking spray

¼ teaspoon salt

1 ½ teaspoons fresh rosemary

½ teaspoon ground pepper

Garnish with fresh Rosemary sprigs

 

Wash potatoes and pat dry.  Cut into ¼ inc slices.  Arrange slices into four rows on baking sheet that is coated with cooking spray.  Sprinkle with salt.  Combine rosemary and pepper and sprinkle slices with half the mixture. Set remaining mixture aside.  Bake at 375 for 20 minutes; turn potatoes slices over.  Coat potatoes slices with cooking spray and sprinkle with remaining rosemary mixture. Bake 20 additional minutes.

This casserole recipe is very tasty and just as easy to make.  You can use this as a main dish or as a perfect side dish to a meat entrée. This vegetable recipe is a great and tasty way to get your family to eat their vegetables.

 

1 can Veg-All, drained

½ cup chopped celery

½ cup chopped onion

½ cup sliced water chestnuts

1 cup mayonnaise

1 cup celery soup

1 cup shredded cheese

½ stick margarine

20 Ritz crackers

 

Mix together all ingredients except margarine and crackers in a 2 quart casserole.  Bake for 45 minutes at 300 degrees.  Melt margarine.  Mix with crushed crackers.  Sprinkle over the top.  Bake 15 additional minutes.

Orange Honey Cake

Orange Honey Cake

 

This is a delightful orange cake recipe that you are sure to love. This the perfect cake to serve to your book club.

 

2 cups sifted cake flour

3 ½ teaspoons baking powder

¾ teaspoon salt

½ cup butter or shortening

½ cup sugar

2/3 cup honey

2 egg yolks

½ cup orange juice

2 egg whites, stiffly beaten

 

Sift flour: measure: add baking powder and salt: sift three times.  Cream butter thoroughly: add sugar gradually: dream until light and fluffy.  Add honey: blend.  Add egg yolks and beat thoroughly.  Add flour alternately with orange juice, a small amount at a time, beating well after each addition until smooth.  Fold in egg whites.  Bake in 2 greased 9 inch layer pans in a 350 degree oven for 30 to 35 minutes.
