Cheese Ball

This cheese ball has a fabulous flavor and is one of my favorites.  I like to serve this at any kind of party I may have.  I also like to take this covered dish functions I attend.  It is always well received.

 

2 packages (8 ounce) cream cheese

¾ crumbled blue cheese

1 cup shredded sharp cheddar cheese

¼ cup small onion

1 tablespoon Worcestershire sauce

¼ cup finely chopped fresh parsley

 

Let cheese stand at room temperature and soften. Beat in onion and Worcestershire sauce on low speed.  Bat on medium speed and scrape bowl while mixing.  Cover and refrigerate for 8 hours.

 

Shape mixture into a ball.  Roll in parsley.  Place on serving plate and refrigerate for 2 more hours.

Beef Medallions in Rosemary Sauce

1 pound beef tenderloin

1 tablespoon butter

1 tablespoon butter

½ teaspoon cocoa

1/8 teaspoon salt

1 clove garlic finely chopped

1 teaspoon chopped fresh rosemary leaves

¼ cup dry red wine

 

Cut beef tenderloin into ¾ inch strips.

Heat 1 tablespoon butter in a skillet over medium-high heat. 

Sauté beef in butter 4 to 5 minutes on each side turning once until brown and center is rare. 

Remove beef to warm platter and keep warm.

 

Cook and stir 1 tablespoon of butter, the cocoa, salt, garlic and rosemary in the same skillet until bubbly. 

Gradually stir in wine. 

Heat to boiling. 

Boil and stir 1 minutes. 

Serve over beef.

Chili Popcorn

Football season is a big deal in our house. We watch football all day on Sunday which means we need lots of snacks for the entire day.  This popcorn recipe is one we like very much. We make before the start of the day and still eating it on the last game of the day.

 

1 tablespoon margarine, melted

1/3 chili powder

1/8 teaspoon salt

1/8 teaspoon garlic powder

1/8 paprika

6 cups popped corn

 

Combine margarine, chili powder, salt, garlic, and paprika.  Drizzle over warm popcorn.  The key to this easy recipe is to make sure the popcorn is warm. Warm popcorn helps the mixture to stick to the popcorn better.

Simple and Delicious Pound Cake

This pound cake is easy to make and I love serving it with seasonal fruits.  Pound cake and strawberries the most traditional but consider fresh raspberries, blueberries or even peaches with pound cake.  It taste divine and looks beautiful on the plate.

 

2 ¾ cup sugar

1 ¼ cups margarine or butter softened

1 teaspoon vanilla or almond extract

5 eggs

3 cups all purpose flour

1 teaspoon baking powder

¼ teaspoon salt

1 cup milk

 

Begin by heating oven to 350 degrees.

Grease and flour a Bundt ban (12 cup) or a tube pan.

Mix sugar, margarine, vanilla, and eggs. Beat on low speed for 30 seconds, making sure to scrape bowl.

Beat on high speed for 5 minutes, scraping bowl numerous times.

Add in flour, baking powder and salt.

Add milk beating on low

Pour into pan and bake at least a 1 hour and 10 minutes or until wooden pick inserted in center comes out clean.

Cool for 20 minutes before removing from pan., then cool complexly on wire rack.
