Hot Hamburger Dip

This is a game day favorite.  It can be made quickly and easily in the morning and kept warm all day on low in the crock pot.   

 

1 pound ground beef

½ cup chopped onion

1 (8 ounce) can tomato sauce

¼ cup ketchup

1 (8ounce) package cream cheese

1 cup grated Parmesan cheese

1 clove garlic, mashed

1 teaspoon oregano

1 tablespoon parsley

1 tablespoon sugar

1 (4 ounce) can chopped mushrooms

Salt and pepper to taste

 

Sauté beef until brown. Add onion and garlic and cook until tender.  Add all other ingredients and stir over low heat until cream cheese melts.  Pour into Crockpot and keep warm.  This can be served with corn chips, but a favorite of mine is blue corn tortilla chips are my favorite with this wonderful dip.

Homemade Salsa

Salsa is one of my favorite condiments.  I love it with chips, but also like to add it to my baked potatoes or brown rice. It is low in calories, good for you and unbelievably tasting.

 

3 medium tomatoes that have been seeded and chopped (nearly 3 cups)

½ cup sliced green onions including the tops

½ cup chopped green bell pepper

 3 tablespoons lime juice

2 tablespoons chopped fresh cilantro

1 tablespoon finely chopped jalapeno chilies

1/2 teaspoon salt

3 cloves garlic finely chopped

 

Combine all of the above ingredients and serve with tortilla chips. I actually like this salsa chilled and served with fresh vegetables as well.

Hawaiian Sponge Cake

Are you having a bridal or baby shower and are looking for a extraordinary cake to serve, look no further. This cake is like and airy and just so tasty, your guest will be on cloud nine.

 

2 cups flour

1 ½ cups sugar

1 teaspoon baking soda

1.4 teaspoon salt

1 (20 ounce) can crushed pineapple

2 eggs, lightly beaten9 inch pan. 

 

In a large bowl combine flour, sugar, soda and salt.  Add undrained pineapple and eggs.  Stir until combined.  Pour batter into a greased 13×9 baking pan.  Bake at 350 degrees for 30 minutes or until done.  Cool in pan for 10 minutes.  Spread Creamy frosting over hot cake in pan

 

Frosting

 

¾ cup sugar

¾ cup evaporated milk

½ cup butter

1 teaspoon vanilla extract

½ cup chopped nuts

½ cup flaked coconut

 

Combine all ingredients in a saucepan. Bring to a boil.  Boil about 7 minutes. Stirring until mixture is thickened. Stir in ½ cup nuts and ½ cup flaked coconut.

Guacamole

A party favorite for a long time, you just can not go wrong with Guacamole.  This is truly the easiest guacamole recipe I have ever tried. You are going to love this dip.

 

2 large ripe avocados mashed

1 ½ cups tomato finely chopped

½ cup chopped onion

2 jalapeno chilies seeded and finely chopped

1 clove garlic finely chopped

2 tablespoons finely chopped fresh cilantro

1 tablespoon vegetable oil

2 tablespoons fresh lime juice

½ teaspoons salt

Dash of pepper

 

Combine all ingredients then cover and refrigerate for at least 1 hour.

French Fried Eggplant

Yum! Yum! I just adore this eggplant dish.  It can used as the entrée for any meal.

 

1 medium eggplant, peeled and sliced into ½ x 2 inch strips

1 cup pancake flour

1 egg

¼ cup water

½ cup parmesan cheese, grated

Salt

Vegetable oil

 

Beat egg and water together.  Dip eggplant strips into egg mixture and then roll in pancake flour.  Drop into hot oil and cook until golden brown, about 2-3 minutes.  Drain on paper toweling and sprinkle lightly with salt and Parmesan cheese.  Serve hot.

Easy Paella

2 cups cooked chicken, cut into 1 inch pieces

1 ½ cups chicken broth

10 ounces shrimp, shelled

1 (8.5 ounce) can peas, drained

2 cups rice

1 (3 ounce) can mushrooms, sliced and drained

1 envelope onion soup mix

1 teaspoon paprika

 

Combine chicken, chicken broth, shrimp, peas, rice, mushrooms, onion soup mix and paprika.  Pour into 3 quart casserole and bake at 350 degrees covered for 1 ¼ hours until rice is tender.

 

I love this casserole for many reasons.  It is very easy to make, it taste fantastic and there is always enough to left over for lunch the next day.

Deviled Eggs

Deviled Eggs

 

Deviled eggs are a picnic classic.  They are the perfect finger food and I just love the taste of them.  This recipe is just the right amount of ingredients to combine and make the perfect deviled egg.

 

6 hard-cooked eggs, peeled

3 tablespoons mayonnaise

½ teaspoon dry mustard

1/8 teaspoon salt

¼ teaspoon pepper

 

Cut eggs in half lengthwise.  Take out egg yolks and mash with a fork.  Mix in mayonnaise, mustard, salt, and pepper.  Fill white egg halves’ with egg yolk mixture, heaping it gently. Arrange eggs on serving dish.  Cover and refrigerate eggs up to 24 hours before serving.

Swiss Cheese Crepe Horns

This is a elegant and tasty appetizer.   Crepes are a wonderful treat that are simply not served like they used to be.  If you need a appetizer that is sure to delight and impress your guest then look no further that this Swiss Cheese Crepe Horn.

 

Crepes

¾ cup all purpose flour

2 cup of milk

2 tablespoons fresh parsley

¼ teaspoon salt

1 egg

Margarine or butter

 

Combine all of the ingredients except margarine.

Mix with a hand beater until smooth. 

Use 1 to 2 teaspoons margarine in 7 inch crepe pan over medium-low heat until bubbly.

Measure 2 tablespoons batter into small cup and pour into pan.

Roll pan until a thin layer of batter covers bottom.

Cook until light brown

Use a narrow spatula around edge to loosen.

Turn and cook other side till it is light brown as well.

Stack the crepes with a wax paper in between.

 

Crepe Horn

10 to 12 six inch crepes

2 tablespoons margarine or butter, softened

1 ½ cups finely shredded aged Swiss cheese

 

Heat oven to 350 degrees.

Cut each crepe into half.

Spread with margarine or butter

Fold each crepe in half with margarine side out to form a funnel.

Fill each funnel with about 1 tablespoons cheese

Place seam side down on greased cookie sheet

Bake 10 to 12 minutes or until hot.

Cranberry Cake

I am always looking for new recipes and was thrilled to find this cranberry cake. It taste so good and is a perfect cake to serve in the fall.

 

3 cups sifted flour

1 1.2 cups sugar

1 teaspoon soda

1 teaspoon salt

1 cup mayonnaise

1 cup chopped nuts

¾ cup whole cranberry sauce

2 tablespoons orange peel

1/3 cup orange juice

 

Stir in dry ingredients.  Add remaining ingredients.  Pour into greased 9×13 pan.  Bake at 350 degrees for 45 minutes.

 

Icing

2 tablespoons butter

2 cups sifted confectioners’ sugar

¼ cup whole cranberry sauce

 

Combine ingredients and spread onto hot cake.

Cocktail Banana Kebabs

This is an unusual recipe, but you have to give this a try.  It is combination is delicious flavors that are very tasty; also it is an easy recipe that you can out together for any party.

 

6 cocktail wieners

2 bananas peeled

3 slices of bacon

6 1-inch pieces of pineapple

6 button mushrooms

 

Thread cocktail wieners onto skewers.  Cut each banana into thirds.  Add piece of banana to skewer.  Cut slices of bacon in half.  Roll each half and secure onto skewer.  Finish with piece of pineapple then mushroom.

 

Place under preheated broiler and cook until all sides are browned.  Serve hot.
