BBQ Roast Marinade

 

This marinade is very tasty and even easier to make.  You can mix the marinade in the morning before you go to work and come home and grill the meat for a wonderful dinner.

 

 

1 beef chuck blade roast. ( 4 lbs and 2 thick)

½ cup of soy sauce

½ cup of ketchup

¼ cup of sugar

¼ cup of red wine vinegar

1 garlic clove minced

½ teaspoon pepper

 

Mix soy sauce, ketchup. Sugar. Red wine vinegar, garlic and pepper in a plastic bag, taking care to mix the ingredients thoroughly. 

Add roast to bag, refrigerate  for 6 hours. Turn the meat over several times while marinating. 

 

The meat can either be grilled or baked after it is finished marinating. Grilling time could take 50 to 75 minutes.  Oven temperature should be 325 degrees and should take 75 minutes to 90 minutes.

Delightful Banana Bread

I simply do like to waste money and yet I never eat all the bananas I buy.  The best thing to with brown bananas is make banana bread.  There is something so yummy about homemade bread and it smells so good.  Here is one of my favorite banana bread recipes and I love it with the optional nuts.  This served warm with butter is an absolute delight.

 

¾ cup sugar

½ cup margarine or butter softened

2 eggs

1 cup (2 medium) mashed bananas

1/3 cup milk

1 teaspoon vanilla

2 cups all purpose flour

½ cup chopped nuts, if desired

1 teaspoon baking soda

½ teaspoon salt

 

Preheat oven to 350 degrees.  Grease only the bottom of a 9×5 or 8×4 inch loaf pan.

Mix sugar and margarine, beat until light and fluffy.

Add eggs and mix well.

Add bananas, milk and vanilla and mix well.

In another bowl combine flour, nuts, baking soda and salt, mixing well.

Add to banana mixture stirring just until; dry ingredients are moist.

Pour into the greased loaf pans and bake for 50 to 60 minutes or until toothpick inserted in centers comes out clean.

Cool 5 minutes before removing from loaf pan.

Baked Ziti

Baked Ziti

 

This is a quick and easy meal that is sure to please.

 

1 jar of pasta sauce (26 oz size)

1 ½ cups of water

15 oz of ricotta cheese

2 cups shredded mozzarella cheese

¼ cup grated parmesan cheese

8 oz uncooked zit pasta

 

Oven should be preheated to 350 degrees. 

Mix pasta sauce and water

Add ricotta cheese, 1 cup of the mozzarella cheese and parmesan cheese.

Add in the uncooked pasta.

Place the above mixture in a 13×9 baking dish, cover and bake 55 minutes.

Remove covering and remaining mozzarella cheese and bake 5 more minutes
