This cake was a classic in my house growing up.  It was another of my mom’s specialties and we always requested it on special occasions.  This cake is also known as a depression cake.  The reason for that name is that the cake has it’s origin in the depression era and its ingredients are what rations were readily available. This is a rich, moist and over the top scrumptious cake. 

 

Cake
1 cup of cocoa (I like Hershey’s the best}
2 cups sugar
2 cups flour
2 cups mayonnaise
2 cups warm water
4 teaspoons baking soda

 

Begin by preheating to 350 degrees.
Grease and flour 9×13 baking pan
Mix together cocoa, sugar, and flour.
In separate bowl mix mayonnaise and  baking soda dissolved in the warm water.
Add to the other mixture and into baking pan.
Bake for 30 minutes or until a toothpick comes out clean form center of cake.  This cake does not rise as high as other cakes.

 

Soft Icing
2 heaping tablespoons of flour
½ cup milk
½ cup shortening
½ cup sugar
3 tablespoons of salted butter
½ teaspoon of butter

In a small pan mix flour and milk. Heat stir constantly until mixture thickens.  Remove from heat and let cool.
Mix together shortening, sugar butter, and vanilla. 
Mix together with the cooled mixture.
